Leafy Greens with Italian-style Caramelized Vegetables
You’ll need:
3/4 cup
Hidden Valley® Farmhouse Originals Roasted Onion Parmesan
1 tablespoon prepared horseradish
1 teaspoon Italian seasoning
8 cups of multi-colored, diced vegetables (such as carrots, fennel, bell peppers, red onion, fingerling or new potatoes, tomatoes)
4 cups baby spinach
4 cups torn romaine lettuce
Instructions:
- Combine Hidden Valley® Roasted Onion Parmesan Dressing, prepared horseradish and Italian seasoning.
- Coat vegetables with 1/4 cup dressing mixture.
- Roast in 450ºF oven for 15-20 minutes, stirring once.
- Meanwhile, combine 4 cups each baby spinach and torn romaine lettuce in large salad bowl.
- Toss in roasted vegetables and remaining 1/2 cup dressing mixture.
- Serve with Parmesan crisps.
